Defrost and peel the shrimps. Remove the seeds and cut persimmon, peel if necessary. Roast pine nuts in a dry frying pan.
To prepare a salad dressing, combine and stir olive oil, orange juice (with few lemon juice drips by taste) and soy sauce.
Combine salad mix, persimmon, shrimps, dressing, stir and sprinkle with pine nuts before serving.
Persimmon can be replaced with equal amount of orange. In this way soy sauce should be replaced with several drips of brandy. The taste of the dish will become absolutely different, but as tasty as the original recipe.
